Tom Kha Gai is Bursting with Thai Flavor

You don't have to be named Tom to love Tom Kha Gai.

Ingredients

  • 1 can coconut milk
  • 1 can reduced-sodium chicken broth
  • 6 quarter-sized fresh ginger slices
  • 1 stalk fresh lemongrass cut into 1-inch pieces
  • 1 lb boned, skinned chicken breast or thighs cut into 1-inch chunks
  • 1 cup sliced mushrooms
  • 1 tbsp fresh lime juice
  • 1 tbsp Thai or Vietnamese fish sauce
  • 1 tsp sugar
  • 1 tsp Thai chili paste
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh cilantro

Instructions

  1. In a medium saucepan, combine coconut milk, broth, ginger, and lemongrass. Bring the whole thing to a boil on high heat. Add chicken, mushrooms, lime juice, fish sauce, sugar, and chili paste. Turn the heat down and let it simmer until the chicken is firm and opaque. Should take about 5 to 10 minutes. Ditch the lemongrass and serve in bowls. Garnish each serving with basil and cilantro.
