Ingredients

Sauce

  • 1 bunch Fresh Parsley
  • 1 Shallot Chopped
  • 1 tbsp Garlic Minced
  • 1 tbsp Thyme
  • 1 tbsp Lemon Zest
  • 1 tspn Crushed Red Pepper
  • 1 cup Olive Oil

Fish and Veggies

  • 1 lb Baby Gold Potatoes
  • 1 Red Onion Quartered
  • 1 Whole Red Snapper 3-5 lbs, cleaned and gutted

Instructions

  1. In a food processor, mix the parsley, shallot, garlic, thyme, lemon zest, and crushed red pepper until it becomes a thick paste consistency. Then add the olive oil and mix until creamy.

  2. In a mixing bowl, combine the potatoes, red onion, 1 tbsp of kosher salt, and 2 tbsp of the sauce and mix.

  3. Place the cleaned fish onto a baking pan. Season generously with kosher salt on both sides, including inside the fish. Coat with the sauce, but make sure to reserve some for after baking. Place the potato and onion mix around the fish and bake for 30 minutes at 425 degrees Fahrenheit.

  4. Drizzle more sauce onto the fish and serve.
