Ingredients

For the Coconut Cream Layer:

  • 1 can 13.5 oz of full-fat coconut milk
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons cornstarch

For the Banana Layer:

  • 4 ripe bananas sliced
  • 2 tablespoons lemon juice to prevent browning
  • 2 tablespoons honey or maple syrup for drizzling

For the Topping:

  • 1/2 cup shredded coconut toasted
  • 1/4 cup chopped macadamia nuts or your favorite nuts
  • Fresh mint leaves for garnish optional

Instructions

  1. Prepare the Coconut Cream Layer: a. In a medium saucepan, whisk together the coconut milk and cornstarch until the cornstarch is fully dissolved. b. Heat the mixture over medium heat, stirring constantly until it begins to thicken. c. Once it thickens, add the sugar and vanilla extract and continue to cook for another 2-3 minutes until the mixture has a custard-like consistency. Remove from heat and let it cool.
  2. Prepare the Banana Layer: a. Slice the ripe bananas and toss them with lemon juice to prevent browning. b. Drizzle honey or maple syrup over the banana slices, gently tossing to coat.
  3. Assemble the Dessert: a. In serving glasses or bowls, start by layering the bottom with the banana slices. b. Spoon a generous amount of the coconut cream over the bananas, creating a creamy layer. c. Repeat the layers, ending with a final layer of coconut cream on top.
  4. Toast the Coconut: a. In a dry pan over medium heat, toast the shredded coconut until it turns golden brown, stirring frequently. Be careful not to burn it.
  5. Finish and Serve: a. Sprinkle the toasted coconut and chopped macadamia nuts over the top of each dessert glass. b. Garnish with fresh mint leaves for a pop of color and a refreshing touch (optional). c. Refrigerate the dessert for at least 30 minutes to chill and allow the flavors to meld.
