Ingredients

  • 3 slices bacon
  • 8 crimini mushrooms
  • 1 tablespoon butter
  • 1 tablespoon chopped onion
  • ¾ cup shredded Cheddar cheese

Instructions

  1. Cook the bacon in a deep skillet on medium high heat until it's evenly brown. Drain it out, dice it up, and set it aside.

  2. Turn the oven up to 400 F.

  3. Take the stems off the mushrooms and chop the stems up, then set aside the caps.

  4. In a big saucepan over medium heat, melt the butter. Add the chopped stems and onion and slowly cook and stir until the onion is soft, then take the pan off the heat.

  5. In a medium bowl, stir together the stem mix, bacon and 1/2 cup of the cheese. Mix it all well, then scoop some of that stuff into each mushroom cap.

  6. Bake the prepped caps in the preheated oven for 15 minutes, or until the cheese has melted.

  7. Take the mushrooms out of the oven and sprinkle with the remaining cheese.
