Peanut Butter Bars
Super-sized peanut butter cups with all the chocolate and PB you could want.
- 1 cup butter or margarine melted
- 2 cups graham cracker crumbs
- 2 cups confectioners' sugar
- 1 cup peanut butter
- 1 1/2 cups semisweet chocolate chips
- 4 tablespoons peanut butter
In a medium-sized bowl, mix the butter (or margarine, whatever you're using) with the graham cracker crumbs, confectioners' sugar, and the cup of peanut butter until it's all well blended. Press that mixture evenly into the bottom of a 9x13 inch pan (no greasing required).
Melt the chocolate chips with the 4 tablespoons peanut butter in a metal bowl over simmering water (or in the microwave if you're a hurry, but don't use a metal bowl). Give the peanut-chocolate an occasional stir until it's nice and smooth. Spread it over the crust in the pan. Leave that thing in the fridge for at least an hour, then cut it into squares. Mmm, nutty.
